37-year-old Murray came to Mango Tree after working for the prestigious Veeraswamy in London; said to be the oldest Indian restaurant in the UK.

"I loved working in London but I had the opportunity to come to a new and exciting restaurant which was an opening I could not miss."

Murray also has celebrity connections, having worked with top TV chef and presenter Keith Floyd, on his hit series ‘Floyd's India’ - a culinary celebration of Indian food shot entirely in India.

South Indian born, Murray graduated from Catering school in Trichy in Tamil Nadu.

Catering runs in Murray’s blood, his family having run a hotel for over 30 years. He was first inspired to cook, as a young boy, while he watched his mother preparing food for their guests.

Since then he has travelled the world, including a 7 year spell in Australia, where he helped establish a chain of Indian restaurants in Sydney.

Murray's speciality is seafood. He aims to expand the range of these dishes at Mango Tree, to include delicacies, such as lobster and crab.
